Black Bean Salsa Recipe
Happy Friday “You” day! For any new readers, if you click on the “What We Do” page, you’ll see we specialize in Design, Organization & You so we try to do a Design post on Mondays, Organization for Wednesdays and You on Fridays. So basically Fridays are free days where we post fun things we’re thinking about. Hopefully I’ll be able to post some pictures while I’m in Hungary over this week for next Friday’s post but if not, the following Friday for sure! But I digress… One of our family’s favorite recipes is this black bean salsa. It’s super healthy too! It reminds me so much of summer and I don’t usually allow myself to make it during the fall/winter so I figured now is a good time to put it out there for you guys.

2 -15 oz cans of black beans (rinsed and drained)
1 -17 oz can of corn (drained)
2 large tomatoes (chopped)
1 large avocado (cubed)
1 purple onion (diced)
1 bushel cilantro (chopped)
Sauce (mix together in a separate bowl first and pour over salsa):
3-4 T. lime juice
2 T. olive oil
1 T. red wine vinegar
1 t. salt
1/2 t. pepper
Mix all together and chill for a few hours. Serve with tortilla chips!








One of my favorites, too! Ive never thought about it, but I don't make it in the winter either! Think it's time to break out the black beans this weekend!

I have been making a semi-homemade version of this and it is a hit in Arkansas. I start with Italian Rose Salsa from Sam's Club. Add the red onion, cilantro, corn and black beans and everyone loves it. I forgot about the avocado. Yours looks prettier, but mine is faster! Kind of Martha Stewart vs. Sandra Lee.
